i think the only "read order" is chronological. the x-wing series by stackpole and allston are pretty good. most of the rest of the novels until the new jedi order series are cheap copies of zahn's thrawn trilogy, which is generally seen as the best. i would avoid the kevin j. anderson books. the new jedi order series was garbage. i haven't read anything after that.

i read some of the young jedi knight series as a kid and i remember liking it, though i also couldnt think critically at that age. does it not hold up at all?

it depends on what you mean by "holds up". none of it is high art; most of it is extremely shallow. if you just want some mildly entertaining adventure stories mostly starring characters you're familiar with, then you'll probably like any of them prior to the new jedi order series. most of them follow the same basic plot of bad guys threaten galaxy with superweapon, luke goes to check out a disturbance in the force, han & leia deal with bullshit politics, and everything comes together at the end. i wouldn't say any of them are terrible, but they can get repetitive.
