what kind of editing are you looking to do?
one thing that's usually pretty high in demand is streaming highlights. most people dont want to watch 5 hours of a stream and would rather someone just edit together the best parts into 10-30 minutes with some edited-in jokes here and there. pretty easy to find full unedited streams of basically anything you're interested in

get a youtube downloader program and play with those. search for ones that you wanna play with and grab those. but then most are now av1 format so don't know if the editor can import them. premiere pro can't so need to convert to some other format to edit.
