You’re gonna see people wherever you go if only 2hrs from denver. Try medicine bow national forest in wyoming. I went there mid summer on a weekday and only drive past one other car. Had an entire campground by the river to myself.
One of my favorites in colorado is cirque meadows west of Fort Collins off the 14. Great ridge line hike with water the whole way and plenty of camping near a creek with amazing views. Push to emmaline lake if looking for more of a challenge. I camped in the area last week and snow was minimal. And not as many people this far north.
