>>2683744There are two types of chorizo: raw and dried. Raw chorizo is popular in Mexican food, is found in the deli, has to be kept refrigerated, and has to be cooked. Dried sausage is ready to eat, shelf stable, and usually found by the cheese or obscure foods, generally not in a refrigerated cooler.
Pic is the brand I use (Colameco’s). Some grocery stores have it, Whole Foods definitely does. Any kind of dried sausage will work, though I think a lot of cured sausages are too salty (“uncured” means it was dried without additional nitrates).
