Cows are expensive to obtain.
They need a lot of pasture. And it's not like just getting a cow and have milk every day. They need to be fertile and adult and past their first gestation to provide you with milk. it tales around 2 1/2 years for a newborn calf to provide you milk.
Goats are sturdy. They almost eat everything. Little need for vet.
Sheep I don't all too much about.
But:
Sheep and goat can be herded together fairly good. They eat whatever the other will not. (Of course, both eat grass. Spare me the retardation)
Whatever you do make sure to have any of your livestock in a group.
Males only make sense for larger groups.
