Black walnut definitely does work, you tap it around the same time as regular maples. Never tried beech or even heard that it works. I've also tried basswood and elm with no success. All samples apparently work with different degrees of sugar content. Norway maples (invasive) are common near me and I've been able to get syrup but their sugar content is like half that of sugar maples so it takes 2x the sap to get the same amount of syrup, and that means twice as long boiling as sugar maple too, still worth it if its all you got. Red maples also work too. Box elder, a type of maple apparently also works. Birch trees also work, but apparently they run later than maples and also the sugar is fructose not sucrose (like maple) and can burn much easier so you have to be careful boiling. Problem for me is that the past couple years have been so warm I didn't even get around to tapping because we haven't even had an extended period of freeze and thawing cycle that you need to get maples to run, (mid Atlantic)
