Look at how comically oversized stuff like the UCS A-wing, Snowspeeder, AT-ST, and Tie fighter are compared to their minifig scale system versions.
Lego is definitely throwing money away not releasing a system-scale gunship since 2013 but a ~$200 version with a better build and similar size wouldn't have been a UCS in the first place.
Kind of reminds me when the 2019 grey triangle was leaked people were screeching about it not having an interior bridge and having only two figs.
Expecting anything more from the UCS line besides a very large ship and 2-3 figures is setting yourself up for disappointment.
The falcon is the exception with a full interior and 7 figures but it also costs 700 with double to triple the piece count. $350 price hurts but there's a big gap between that and falcon tier levels of expensive.
