You get a wide assortment of parts, often with some interesting stuff you've never seen before, a lot of pieces you wouldn't normally acquire on your own, and the price-per-piece is always much cheaper than if you bought the sets new. Once you get rolling, you can use Bricklink to fill in the gaps.
