I'm not really sure what I'd do for the smaller Agori/Matoran sets. Most of the iconic Matoran characters either became Toa or wouldn't really benefit from an Av-Matoran build. Maybe instead you could just have small Technic rahi? I'm sure that could be fit into the story pretty easily, too.
I also wouldn't call it Stars because that sounds retarded and not very Bionicle-like at all. "Legends" would have been perfect but they already used that. Possibly "Bionicle: Legacy" or something like that.
