I like the cold, wet feel of a lot of the areas, with environments that include a lot of water, mist, mud, and snow.
I like the calming music, which sounds like a mix of classical and jazz.
I like the old, historic feel of certain areas, like Celestic town which is isolated up in the mountains, or Snowpoint city quietly sitting at the northern tip of the region with it's temple.
I also really like a lot of the new pokemon. (picrel)
And last but not least, I really like the map design. It's got a nice aesthetic going with it's triangular shape, with the lakes at the corners and Spear Pillar at the center. The biomes are spread around reasonably well between the various parts the region, and it all flows very consistently. And the progression path you take through the region is great, on a first playthrough you'll be experiencing a lot of deadends with roadblocks you need to come back to as you play, which IMO builds up the experience of exploring the region, like a metroidvania. I also like how the first 4 badges take you through most of the western and eastern halves of the region, with the next 4 having you explore the rest of the unexplored areas scattered around the edges of the map one by one. It gives the areas you reach in the first chunk of the game, like Hearthome and Veilstone, the chance to be revisited regularly, cementing them as hub areas, rather than one-and-done spots of the map, and it really lets you settle into the Sinnoh region as a whole as you play.
