That's a big reason I ship them. She's more thoughtful and reflective than Ash and Gou and tries to act more mature and above it all when take she's just a kid like they are, and it's great to see them rub off on her like that.
I think the most appealing part of her personality and the thing that I like most about her is that there's something of a disconnect between this thoughtful, kindhearted, well-meaning girl and the way she responds to situations with annoyance or disbelief. Whether it's shutting down Ash asking her to get Pokémon with them, pointing out Darmanitan's weird expression, calling the boys out about a snowcone maker or being disgusted about how Impidimp is the Mean Pokémon, she's never hesitant to make her real thoughts known, even if they're not the kindness they can be.
As an aside, I also really like how Ash wasn't instant friends with Gou or Koharu. Gou spent two episodes fighting with him before they made amends and became bros while Koharu was that much slower to warm up to him. It feels more natural that they spend time becoming friends (even Gou and Koharu have to rekindle their friendship somewhat) rather than them instantly becoming impressed with Ash like happened in previous series.
