You could frame episodes around something like the television companies of the Pokemon world doing various programmes, like interviewing somewhat famous people about their work (like those mentioned) or ordinary people, like Bug Catchers spending the day in the woods, or Bird Keepers training their Pokemon, or the activities of Triathletes/Swimmers. Or do a documentary-type episode that focuses more on the Pokemon rather than human characters.
Throw in some action for good measure by including sports programme-style coverage of some official league-sanctioned battles.
