The Ash Serena travelled with was a SO EPIC COOL shonen protag.
Misty didn't want to admit she could fall for an idiot, so she denied it, hence the scene from the blimp episode or the girl she karate chops and then refuses to admit that she did it out of jealousy. The 2nd movie was pretty much her getting pissy that another girl is getting friendly with him while also insisting they are totally, definitely not a thing.
Serena saw Ash as a hero and wasn't ashamed of how she felt.
Basically, they are two different characters who's feelings were handled differently.
