Nowadays I'd probably want to start with a grass type for ease and comfy. You know, don't have to feed or worry too much about something that does photosynthesis, and since I like to take things at my own pace a pokemon that could appreciate just chilling would be good
Leafeon for main partner, Swablu for shouldermon - or more correctly, hatmon at least until it evolves, Donphan, Lapras, Chikorita and Chimchar would be my team. I'm not sure where each of them falls into my favorites except for Leafeon which is my de facto favorite 'mon, but I like all of those a lot.
This is the team assuming I was just walking around and chilling. I'd probably try to just go and do that for a while and then later try to get serious as a trainer, at which point I'd probably try to evolve the ones that weren't already. But mostly I'd want to go out and explore, because the pokemon world is amazing.
Granted at some point I'd need to do something with my life, but I'd like to leave that for later.
