When you're done mass-evolving, then you can transfer the stuff you don't want to keep.
You can probably evolve 80 in 30 minutes if you're efficient. Put a video on or something whilst you do it.
Also, the search term "evolve" only shows Pokémon capable of evolution, and you have met their evolution requirements (candy, items, special buddy requirements, etc.)
