You got some good taste. The only things I disagree with are that I'd put Blastoise over Charizard and Torterra over Empoleon, but that's just me personally. The first forms are spot on and so are the rest of the final evos.

Just like Pikachu, Blaziken, and Lucario, too much attention burns people out.

No body hates Torterra or Infernape because it never felt like GameFreak or the Anime team was turning their starters into a second mascot. Infernape gets bonus points because it's not Blaziken. Whatever his usage or overusage was prior to Gen V fell to the wayside when Speed Boost was released.

Because first and third stages are the ones that get all the merch.

Plus, a lot of the middle evos are just kinda awkward looking. Charmander is cute and iconic, charizard is badass and iconic to the point of oversaturation, but charmeleon is just kind of Barry Bostwick.

You choose fennekin, your rival (who wears blue) chooses froakie, and Sana chooses chespin. It just fits.

Blue is a rival color. Rivals tend to wear dark, cool colors. It's an anime thing; if you watch a lot of shonen fighting anime you should know what I'm getting at. The rival from the original RGBY is even named Blue.
