The biggest updates, the underground and deep dark, are only a fraction of how much the nether update changed the game. Once the holos have experienced it all (relatively), all that's left is to do mega builds and resource gather.
The only way to recapture the Minecraft magic would be for the game itself to completely change the formula again and have them start on a blank server completely detached from the original (highly unlikely), or get mod permissions (also unlikely).
