The Fright Knight's one from this thread could be a neat choice if you're into the edgy gothic aesthetics but, if you want something more traditional, the classic King's Castle (6080) or the Royal Knight's Castle (6090) are also excellent choices, the former in particular is probably one of the most recognizable Lego sets ever made. If you're into space then consider some of the late 80s - early 90s subthemes like Ice Planet, Futuron and M-Tron, there are tons of great sets in either of those in just about every price point (my personal favorite is the Mega Core Magnetizer, though I admittedly have a Mass Effect bias for Mako-like vehicles) or maybe even some of the earlier Star Wars sets like the X-Wing and the blue Tie Fighter which have a very unique retro design to them and are surprisingly reasonably priced nowadays. And lastly, consider some Paradisa if you're into the le meme vaporwave aesthetics, some sets like the Dolphin Point and Poolside Paradise just sort of scream classic Lego.
