In Pokeshipping, it is important that it's Ash and Misty's dynamic specifically. Ash and Misty have unique character traits that if taken away, would make it not be pokeshipping.
With Amourshipping, nearly every trait distinct to Ash is gone for almost the entire duration of X and Y. Meaning you might as well pair serena with any of the other dozen kind, brave male characters and you could have the same dynamic.
Ash's personal history is irrelevant in XY, so it's irrelevant to Serena. Ash's attitude flaws only crop up once with Serena so she has no real dynamic with them. Serena's only bouncing off point with Ash is that he is brave and nice. There are literally hundreds of characters that fit the bill. Even beyond shipping, from a writing perspective Serena and Ash have no chemistry. And I would argue that's not Serena's "fault" so much as the writters autistic dedication to making Ash into some kind of boring shonen protagonist.
If Serena had the same devotion to the Ash a mere 200 episodes before X and Y their dynamic would be immediately more interesting. This is part of what breaks the common Hinata comparison.
Hinata LIKES the bumbling idiot brash hero Naruto, not some sasuke esque version of Naruto. Serena likes the "real Ash" whatever the hell that means
