Everything else gets used. Should be a little cheaper if you're using (almost) everything you buy, right?
The colour-coding for the track pieces is:
Grey - 315mm curves (both 45* and 15*) (two package worth)
Red - 282mm curves (two package worth)
Orange - 348mm curve (single piece, will be 3x leftover)
L. green - 481mm curves (one package worth)
D. green - 718mm curves (one package worth)
Blue - 29mm and 46mm straights (one package worth)
Purple - 33mm and 38mm straights (one package worth)
Black - Expanding straight track piece
Uncoloured straights are the 4x 46mm straights that come with the 90* crossover, a pair of 64mm straights (one package worth) and then 124mm (one package), 186,mm (two package) and 248mm (two package) straights.
Scenery is drawn pretty crummily compared to yours, but it's just meant to replicate the rough placement of things. Most of it is identically placed to what you've already got, with the addition of the road to the lumber mill (the expanding straight track looks like a road crossing, and there's no road going to the lumber mill in yours, so I thought it made sense).
Basically, you've got a pretty good plan already as far as accomplishing what you're looking for. These are just some suggestions that might save you a few bucks (and leave you with fewer unused track pieces).
