Overly saturated colors

When shooting my paintings, I end up loosing some of the range and softness of the colors and values. Everything looks too saturated and "potent".
I'm using a non polarizing light filter on the lens, and on the LED lights, as to not get glare.
>Canon EOS 2000D
>F/8
>4 sec exposure
>100 iso
>55mm focal length
>white balance is set to ambience priority
these are the best setting I figured out with the help of AI.
No amount of Photoshop can save the inaccurate values and exposure.
Right is the photo I took with my phone in sunlight, and it's close to what it looks like irl.
Is the issue the lights not being powerful enough?

1. I’ve got a Fuji X-T5 and want to upgrade to full-frame but keep size and weight close or lighter. Need no downgrade in IQ.
Considering Sony A7C II or Canon R8.

R8 lacks IBIS. Can that be fully compensated with stabilized lenses or handheld techniques?

2. Thoughts? Other recs? What’s /p/’s preffered mirrorless Camera? Full frame? APS-C? Ricoh?

Is a micro four thirds good enough for a road trip camera? I want a camera that can take good photos, especially at night, the sky, and landscapes and documenting.
I currently have an EM 1-III, but I keep wondering if it's actually good enough, and it is, and I'm just being taken for a ride with gear autism, or if it is actually shit
I really, REALLY, want an "always carry" camera that can do anything, in any weather

Hi /p/ ... I have to take my Leica M6 in for repairs and they will cost $1000. I'm willing & able to paypig up that amount but it's getting ridiculous. should i just get rid of it afterwards? anyone been through this?

>rangefinder composition is worse than SLR (like, shooting through a chain link fence)
>limited lens selection (no zooms, no long lenses, no fisheye)
>m mount lenses aren't radically better than SLR lenses, and already it's 35mm film so it's never going to be perfect
more broadly im wondering if 35mm is even worth it instead of digishit + a medium format film camera
